Chocolate Covered Vanilla Cake Peppermint Patty Cookies


Phew.

Say that ten times fast.




That's the only name I can really come up with to get all the bases covered!  These are so delicious, that I don't think you should skip any part of these cookies.  They are actually quite deadly. But luckily, they turn out pretty large, so cutting them in half helps. A little bit.




Did you have a nice Easter?  We had a nice brunch at my husbands' Aunts' house, but I didn't eat crazy.  I had some potato, egg, cheese and bacon casserole which was pretty tasty, and fresh fruit and some really tasty cinnamon oatmeal.  I had about 2 mimosas and then some yummy coffee.  We stayed about five hours, and since the weather was ugly, cold, and rainy today here in Jersey, we went straight home. 

I made this bundt cake though, and it was GOOD!



Sorry for only one photo (and instagram).  Lately, I've become obsessed with instagram and hash tagging, like, everything!  It's nuts!  I got the inspiration for this cake here. Dorothy is a sweetheart and her dessert blog is amaze balls and totally drool-worthy!  Take a moment to check it out!

This cake was called Lemon-Cherry Vanilla Bundt cake with Vanilla Glaze.  It was really good and so moist!  I had to change it up a bit {Dorothy already knows the story} because you apparently now have to check ALL expiration dates.  Who would have thought I would have purchased the frosting can that was 5 months old?!  Yeah, I  was actually a little stunned for a moment.  So of course I chucked the can and went with a simple glaze to pour on top.  And I chose the cherry-vanilla flavor packets since the store did not have the pink lemonade flavors. Jerks.  All in all, I love the idea of the colored swirl in the center of the cake and lemon cake is never a bad idea.

I intend to make the pink lemonade cake soon!  I love pink lemonade and the cake looks even prettier with that light pink color.

The rest of the night has been consumed with eating a few peeps, some more leftover cake, and peppermint patty candies.  Ugh.  My butt better hit the gym the next few days!

And speaking of peppermint patty candies....please make these cookies?! 







These are a fast and easy treat!  I have seen this similar idea with a chocolate cake mix used, but I felt like throwing on the clever cap and going with a vanilla cake mix instead.  Ya know, to stand out a bit. It worked, too!  These cookies were a hit today. I wanted to keep them all to myself but they are too large and too deadly to be kept in the Stonerock household.

They were pretty scrumptious like this...




But anything is better dipped in chocolate.  And remember...these are best served COLD!  chocolate. is. much. better. served. and. eaten. cold.  :)



Chocolate Covered Vanilla Cake Peppermint Patty Cookies

Yields about 12 cookies

Ingredients

1 box vanilla cake mix
2 eggs
1/3 cup veggie oil
1/8 tsp. vanilla extract
Mini peppermint patty candies (you'll use about 12).  Put the rest in a candy dish in your living room.

Chocolate Dip
1 bag of semi-sweet chocolate chips
1 T. veggie oil
Microwave for about 1 minute, stir well.

-Pre-heat oven to 350 degrees.

-In a medium bowl, mix all ingredients well with wooden spoon.  Place cookie batter in the fridge just for about five minutes.  Grab just enough batter to neatly shape around a peppermint candy and form into a ball.
Place on a nonstick cookie sheet and bake for 10 minutes.

-Cool cookies completely.   Place cookies on parchment paper and spoon the melted chocolate all over the cookies. Place in fridge for a good hour.  Eat up!





These are fun to make, too!  These are necessary in your life!  The best part about them is that they cure a chocolate fix instantly, and the entire cookie tastes like mint. Awesome mint flavor from one small peppermint candy. The cake mix layer just adds more texture and a unique flavor!  I hope you find these as unique as I did.
