Workout: Probably
none today. I had a decent night’s sleep
but when my alarm went off at 5:30, I decided to sleep in a little more. I worked from home today.
Breakfast: 8am
.My stomach was growling and I felt decently hungry. I made a yummy bowl of hot goodness of flax
and quinoa cereal that I picked up at the grocery store and added some
cinnamon, banana, a few blackberries, peanut butter and drizzle of honey and
pinch of kosher salt. It was really
delicious and kept me full until close to Noon.
I also had a cup of my McDonald’s Medium Roast k-cup coffee blend with a
new-to-me find of almond milk coffee creamer, flavored vanilla. It’s delish!
…sipped on water for a while after this.
Lunch/snack: 12pm. Again, lunch is more like pick food for me
unless I’m absolutely famished. I wasn’t that hungry so I ate a few pieces of
raw carrots and broccoli with an avocado and Greek yogurt dipping sauce I made
which was just alright. It could have
way more spice to it and it needed cilantro which I didn’t have.
Snack: 2pm. I’ve
been trying to make healthier snacking choices so today was ( typical) with a
strawberry Greek yogurt cup topped with cranberry and cashew granola and a
little pumpkin butter. Filling and hit
the spot. I’m a HUGE fan of yogurt
bowls.
Dinner: 5:30pm. Crock pot BBQ Pulled Pork Sandwiches. My house smells incredible. Easy and delicious weeknight meal and great for leftovers. Tip:
Take lunch to work with some leftover pulled pork on top of spinach
leaves with cucumber, carrots and tomatoes in a light vinaigrette. Recipe Here.
Dessert: Went to Friendly's for ice cream. Devoured the ice cream. Went to the movies.
Got home around 11pm- bedtime.
Last Wednesday is remembered as one of the dangerous days of my life. This has been considered as center of the grief for the entire family.
