A Bland Tuesday

(happy birthday, mom)!

Workout: 6am. Ran 2 miles on the treadmill.  I’m not a big fan of the treadmill, but it’s truly winter here in New Jersey now and this morning was 10 degrees.  I don’t run in 10 degree weather.  I don’t even like to run when it’s below 40 degrees.  So treadmill it is for a little while.   I also added in a few 10 pound dumbbell arm workouts, 12 reps of bicep curls and tricep dips, twice. I was a sweaty mess and it felt good.

Breakfast: 730am. Green smoothie!  (2nd day in a row) About 2 cups of spinach, 1 cup unsweetened almond milk, dash of cinnamon, about 2 tbsp. plain Greek yogurt and about 6 frozen banana slices. It hit the spot and kept me full until around 11am.  I typically don’t eat a large breakfast as I usually only have a smoothie or cup of coffee or oatmeal.  I try to cue in hard to how hungry I truly am.  It just depends on the day and what’s happening.

Lunch: 11:30am.  Lunch isn’t really my thing.  Let me explain. It all depends on how hungry I am or what I’m doing that day.  Lunch to me can be a salad or an apple or yogurt.  I was quite hungry though and bursted at the seams when I saw I had one ripe avocado left in my fruit bowl!  I had whole wheat bread handy and some leftover scrambled eggs from Claire’s breakfast yesterday. Yes I technically stole her food but eggs are a synch to cook! (sometimes). So I warmed up the eggs with a little cheddar cheese, mashed up half the avocado with a little olive oil, salt and pepper and spread it on top of the eggs and cheese and added a sprinkle of hot sauce.  It was divine and also healthy!  I worked from home today so I had easy access to food (thankfully I went food shopping over the weekend)! My daughter picked at her peanut butter toast I made for her, but ended up only sucking the juice out of four Halos’ and a couple pieces of chex rice cereal. Coooooool.

Snack: 1pm.  I wasn’t too hungry- I try to sip water throughout the day as well so I know at certain times during the day, that’s keeping me full too.  I went with my own little trail mix of raw almonds, sunflower seeds, dried cranberries, cashews and granola.  It hit the spot.  I almost always choose a healthy snack to munch on.  Lara bars and Luna Bars are great to keep in your bag.  Along with making your own trail mix.  Target is great for this!

Dinner: 6pm. Leftover Santa Fe Chicken Bake.  This dish is always a hit with my family and it’s comforting and full of flavor. This is where I go nuts because I love the idea of dinner. And I’m hungry. And who doesn’t love rice, chicken and cheese together?

Dessert: 9pm.  I felt hungry and went with my feelings.  I enjoyed a small bowl of honey nut rice chex with skim milk.  Hit the spot.  By 10pm (which I try to be in bed every night at that time) I had brushed my teeth, drank some more water and tried to read a book but caught myself drifting off within 5 minutes.  I think I was asleep before 11pm.  Nights like those are great!  Certain nights I try to not give into temptation and have ice cream or all the chocolate.  But If I’m hungry still, I’ll opt for a bowl of cereal, or a few pretzels and peanut butter with an apple. Or yes, sometimes, I do the ice cream and all the chocolate.  It’s all up in the air!

Tell me what you typically consume in a day.

What's your favorite meal of the day?
