Apple Cider Caramel Cookies


In the past, Halloween always seemed like a bigger deal than now.  What was I going to dress up as?  Should I bake those cut out pumpkin cookies? I did not enjoy baking 10 years ago. ha!  How much candy should we buy for the trick or treaters? Should we even be home to hand out candy?

These days, I prefer being home to hand out candy.  Maybe order pizza or make some hearty chili, relax on the couch with a glass of wine of course, and watch horror flicks.  That's my ideal Halloween night!  Oh, and indulge in a mini Twix. Or eighteen of them.That may or may not have happened.



 This Halloween, we have our baby girl which makes it a little more thrilling. Especially since next year begins taking her out to collect her own bag of treats.  We also had family visiting from California and New Mexico.  My Dad's two sisters whom I adore and wish they lived closer!  We all hung out on the couch, played with Claire, (she was very entertaining), we ate pizza for dinner and ate these cookies and a cookie cake I made.  It was perfect.

Claire was Sleeping Beauty if you were wondering.  Though, she was not a sleeping beauty the night prior. :)


So, these cookies.



So moist, so chewy, so full of apple cider flavor.  SO delicious.  And addicting.  If you can't control yourself from licking the wooden spoon of cookie dough like me, lick at your own risk!  This cookie batter is crazy good.

And then there's a gooey caramel center.  How can you go wrong?  It's Fall in one bite. 



I came across this recipe two years ago and it took me two years to make them.  If you love apple cider and caramel, it's a no-brainer to give these a try. Make these for Halloween or Thanksgiving.  Or both.  I'm definitely making these for a dessert on Thanksgiving.

I hope you have a wonderful Sunday!  It's a colder day here in New Jersey along with crazy winds but my family and I are sucking it up and taking a trip an hour away in PA to an apple festival.  Wish us luck!  I am going to buy my apples there for my future First Apple Pie  and hopefully work on a test one within the next week!
