What I ate for lunch

I love putting together different and healthy foods. This salad is quick, healthy, refreshing and delish!

Since becoming healthier three years ago, I've noticed certain foods that I thought I'd never touch with a ten foot pole, I did.  And when I make my own meals at home, I'm always going to eat them.  Plus, it's fun!

Since I'm no longer pregnant and don't really have the excuse to eat a dozen donuts, I've recently started working out at home when I can and cooking a lot more.  Hey, I had my days when I was pregnant that I still watched my portions, ate lots of salads and I never ate for two.  Seriously, don't do that.  Not necessary.  But that donut will now have to be declined a bit more often. #dang

Salad for lunch:

-A good handful of spring mix
-A tablespoon of your favorite hummus
-one apple, diced
-half of one red bell pepper, diced
-feta cheese { fat free is still very tasty }
-balsamic vinaigrette with a drizzle of honey
-dash of black pepper  { you can add salt if you like, but I hardly ever add salt to my foods and the feta cheese gives it that salty zing! }
-mix well
