Cinnamon Toast Crunch Pancakes + Random weekend photos



Good morning and happy Monday!!!  {note the sarcasm}

Another week already?  Okay. Well, all we can do is try to kick its ass and hope it flies by!

I really hate Sunday nights..because I think of the week ahead.  And I mean, it's not like I  have anything pressing or stressful to deal with, it's just that new week ahead feeling I think we all experience.  Major thumbs down.

But for now, I have something delicious to discuss with you and that's what's making me much happier.  It's pancakes you guys.  Because who doesn't smile when they hear or see pancakes? 


Cinnamon Toast Crunch Pancakes to be exact.  Well, that's my name for them anyway.

I came across this genius recipe from one of my favorite food blogs.  Shawn's blog is so wonderful and filled with genius recipes. Cinnamon bun pancakes?  Like....OH. MAH. GOD. I died at all of her drool-worthy photos.  But here's the thing. I suck at Ziploc bags being utilized to"pipe frosting" and so these had no real 'swirl.'  I felt a bit as if just placing the cinnamon filling on top of the pancake batter was defeating the entire purpose of the 'cinnamon roll.'





And maybe it did a little, but after tasting how scrumptious these were, I immediately thought Cinnamon Toast Crunch cereal!   Simply put...incredible.





There were literally a few 'crunchy' bites on some of the pancakes from frying up on the griddle.  And the cinnamon filling was sweet, yet had a great flavor with these pancakes overall.  Add a little warm maple syrup to these or the cream cheese frosting on Shawn's site.  Whatever you do, make these immediately, mmmk?


I came up with a basic pancake recipe for these {because I wanted to do so for a while  now} and finally...this recipe worked!  And on the first try!  Like...holy shit! I was pretty stunned, as I am far from a great baker and I suck at measurements and coming up with a decent baked good on my own.  But I guess something clicked yesterday, because this pancake batter is so effortless to make and so fluffy and delicious.  Hope you like it. :)

Cinnamon Toast Crunch Pancakes { basic pancake recipe}

Pancakes: 

-2 cups all-purpose flour
-2 1/2 teaspoons baking powder
-3 tablespoons granulated sugar
-1/2 teaspoon salt
-2 eggs
-1 cup milk {I used skim}
-2 tablespoons melted butter 

 - Stir all dry ingredients together in medium bowl, set aside.   In another bowl, whisk eggs and milk together and add to dry mix.  Add in melted butter.  Do not over mix. Lumps are a good thing!

 -This batter should make at least 8-10 pancakes.  Heat your griddle pan over medium-high heat, melting some butter. Make them any size you want, watching until bubbles form around edges { 2-3 minutes on each side} and then flip.  Before you flip, you'll add some of the cinnamon filling. Make sure not to eat it all before you use it in the pancake...like me.  

Okay, that didn't happen but I was taste testing because it's that yummy.

Cinnamon Filling:

1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon








I really can't believe how perfect and yummy these pancakes turned out.  All of that slightly burnt/crispy exterior?  Yeah.  You're gonna want to eat that.  That's the cinnamon-y crunchy goodness right there.

I hope you love these as much as I did!
