I like to improvise sometimes, though. I didn't have eggs, but I really wanted to bake up caramel brownies. And so the eggless route I went. And I gotta tell you, these brownies were still moist, chewy and tasted delicious! They were not as sweet as regular brownies which is weird because there's 2 cups of granulated sugar in this recipe. But hey, it's a touch healthier anyway, right? Maybe that's why. Again, I really have no clue. I just know they were good.
I didn't think these would turn out well at all, but they totally did! I'm sorry I don't have more photos. I made them and the hubby and I went to town on them. So, they are prettier in the actual pan, not cut up yet. I promise.

Eggless Caramel Brownies
Ingredients:
-1 regular sized bag { get them at cvs or your local food store} of any chewy caramel candy you enjoy. { I used Werther's Original caramel chews}.
-2 cups all-purpose flour
-2 cups granulated sugar
-1/2 cup unsweetened cocoa powder
-1 tsp. baking powder
-1 tsp. salt
-1 cup milk { I used vanilla almond milk...I ran out of regular milk, too}.
-1/2 cup veggie oil
-1/2 cup {1 stick} unsalted butter; melted
-1 tsp. vanilla extract
Method:
-Pre-heat oven to 350 degrees.
-In a large bowl, mix all of the dry ingredients together.
-Next, add in all of your wet ingredients and mix well.
-Spray a 9x13 baking dish with cooking spray and pour half of the batter in; spread evenly.
-Top the batter with all contents of the candy bag. Place caramels evenly next to each other.
-Pour the rest of the batter on top of the caramels and spread evenly again.
-Bake for 25-30 min. Let cool at least 15-20 minutes.
-Cut into squares and top with chocolate chips or whipped cream if you like.

Do you prefer classic baked-good ingredients or do you use ONLY healthy ingredients? Remember, it's all about moderation. A classic chocolate chip cookie ain't gonna hurt ya! And neither will a zucchini/vegan- style chocolate chip cookie. That sounds yummy and I'm sure there's a recipe for that somewhere out in internet world. Or maybe not. I clearly should stick with what I know. :)
