Strawberry and Fresh Mozzarella Salad



Are you ready for the most refreshing explosion of flavor to ever touch your taste buds?

Seriously...


You guys....this IS your newest summer treat. Make note of this, because you're going to want it. Preferably sitting outside on your patio or deck, in the sun, with jazz music in the background, and a glass of wine in your hand.  Oh, you mean you don't relax like that during the warm months?  You should give that a whirl sometime. :)


I made this while waiting for the hubs to make his awesome Velveeta mac and cheese! Oh yes, I still buy that stuff. But it's for his use only; and well, whenever he makes his mac and cheese. I also had a few strawberries in the fridge that were about two weeks old.  I picked out the ones that still looked good and chucked the rest.  I of course adore a great caprese salad; fresh mozzarella with tomatoes and basil with olive oil and balsamic vinaigrette.  But strawberry with mozzarella and fresh lemon juice with black pepper and salt...OH-EM-GEE.  It's also very good.






Make this for a snack. Or an appetizer. Or if you have a lot of the ingredients, call it dinner.  Just make this, okay?  And eat it preferably outside on a warm day. With wine. And jazz music playing. Ok , I'm done.


Strawberry and Fresh Mozzarella Salad


Ingredients:

-1 ball/pkg fresh mozzarella
-6-8 fresh strawberries, cut in fours
-Juice of 1 lemon {you might just need half of the lemon.I used half. The entire lemon might be too tart/powerful}
-1-2 T. balsamic vinaigrette
-dash black pepper
-Kosher salt to sprinkle on top of each piece


*The lemon juice really should be used for this recipe. It adds a wonderful tart note and since strawberries are utilized, the fruit flavor really makes it all come together.



- Cut the mozzarella in slices, and then cut again for smaller chunks, set aside
- Mix the rest of ingredients together except the salt.
-Once all is combined and set on a plate, sprinkle each piece with the salt.

All that's left to do is eat!

*This goes wonderfully with a fruity and crisp white wine.





Each piece gets better than the next. Once you take one entire bite, you can't stop. Summer is approaching.  I would purchase these ingredients if I were you. :)

  1. Ok I LOVE strawberries and balsamic! I never thought to pair with mozzarella though, but it's genius. I also love this as a sweet treat with some whipped ricotta mixed with honey and vanilla. Delish!
