The Groundhog completely failed us. He totally lied to us. March is almost wrapping up and the temperature has been comfortable hanging out in the 40s for weeks. I live in South Jersey. And with that said, it's totally supposed to snow tomorrow.

The rest of the week looks a tad nicer with it being in the low 50s and partly sunny. Warm weather can't get here fast enough! What's the weather like where you live? The Caribbean doesn't count. :)
Even though Mr. Groundhog totally scammed us, I am not backing down from "Spring Things". I already have cute floral print pillows on my bench on the front porch. *sneak peek*...
I actually bought them about a month ago. {Great find at Home Goods...love it there!!}. As soon as I got home I had to utilize them and then take a picture to send to my mom via iPhone. She lives 20 minutes from us. I send her pics of everything cute that I buy; it's what we do. ;-)
I also have a few Spring decorations, of course. My Spring /floral print flag is hung, a floral wreath is on the front door, a couple signs and a little flag and a new wind chime. Now it needs to warm up so I can plant some flowers!! I'm so not a green thumb person. Like, not at all. But I don't mind cleaning the front up a bit from what Winter did to it and planting a little bit. I despise watering plants, but you have to do it. I don't want my plants to die so that's the only reason I water everything. It's just as important as exercise and eating. Or just eating. :)
I was never a fan of limes, however I adore a good quality key-lime pie. I love the texture and creaminess of it, and I find it to be the perfect summer dessert. It's so refreshing! I prefer lemon much more. Lemon gives such a vibrant flavor to many dishes, whether you're cooking or baking something. It adds life to the dish. I love these little tarts for the simple joy in how easy they were to prepare and after about an hour of hanging out in the fridge to firm up, they.were.perfect.
Make this or any kind of refreshing dessert that you adore because it IS Spring! It just doesn't feel like it.

What you see above...is all ya need! I know the pie shells are a cop out, but for delicious, yet simple desserts, you cannot go wrong!
Mini Lemon Tarts
Ingredients
Look Up. {just messing}. No but seriously, look up.
1/3 cup powdered sugar
1 can sweetened condensed milk
juice of 1 lemon
1 8oz pkg of Philly Cream Cheese, room temperature.
1 pkg ready-to-eat graham cracker mini pie crust shells
Directions
Cream together all ingredients in an electric mixing bowl or with hand mixer until smooth and creamy.
Pour spoonfuls into each pie crust, chill in fridge for about an hour so the mixture can firm up. Top with whipped cream, mint, fresh berries, or anything else your hungry heart desires.
Could you die?
They look almost too pretty to eat! The mixture is smooth and creamy and has just the right amount of tartness from the lemon. You would think 1 lemon wouldn't give enough tart flavor. I thought that too. But it totally did. I was going to use about 3 lemons. Glad I didn't. It's the perfect bite!
