Lighter Cobb Salad


I adore a good salad. And more recently, I find myself only eating spinach leaves. Heck, why not?  Apparently they are the best for you out of all the lettuces out there.  I love making salads at home and having my lunch all set for the next day.  I love a salad that has a good crunch to it and one that is satisfying. 

This lighter Cobb salad has all of that.

The typical Cobb salad includes bacon in it, turkey,  tomatoes, and a heavier, creamy dressing; like Blue Cheese.

This salad is totally a bit healthier and very simple to make. I used ham in this, although, since turkey is healthier, I would have went with that.  However, I had a ginormous ham steak in the fridge and I didn't want it to go to waste. Then just add some spinach leaves, 1 chopped cucumber, 3-4 hard boiled eggs, and top with shredded cheddar cheese and some candied walnuts. And the best part? Eat up!  This salad was so filling that I did not feel the hunger pangs again until around 6pm.  I ate it around 12pm. Love that.


It's delicious and makes for a very healthy, yet satisfying meal.  I do have to apologize to you though...I took two other pretty darn good photos of this beautiful salad and cannot find them for the life of me on my computer. And I am currently charging my camera battery because it's dead. It literally needs to be charged all night.  :-(

The one photo was of the entire salad with a yummy balsamic vinaigrette on the side.  It looked pretty, dang it! Regardless, this salad was very tasty and the vinaigrette really complimented it nicely instead of a thick , heavy dressing like blue cheese.  Although, I adore a good blue cheese dressing; but that's for another time.  The walnuts provide a wonderful sweet and crunchy bite!
