Apple Chicken Salad


Hello Friends!

I have to say...I'm getting slightly irked by night time posts. (my posts, that is). I wish I had the time to cook allllllll day long, get great shots in the beautiful daylight and post all day long.  Unfortunately, that's so not feasible. That's why when it comes to the weekends, I cherish them now.  And of course the perfect natural light.  I will take what I can get for now.  :) 

Don't get me wrong, since I constantly think about this blog and different recipes, what we're having for dinner, or a new cookie or muffin I would love to bake, I enjoy sitting down and writing 'nightly' posts, too.  The downfall of that is that my photos aren't as pretty and sharp.  This chicken salad, however, was made and captured on Sunday. It's all gone now since I have had it for lunch the past two days and it was deeeeelicious!






Oh yes, shredded chicken breast, {I actually purchased 1 whole Rotisserie Chicken that was already cooked, let it cool down in the fridge, and then had fun shredding the poor fella}.  There there's crisp apple, some light mayo, and a shallot all mixed together and placed on some pita. It.was.so.yum.   YUM I tell you!


I don't like to clobber the salad with tons of mayo. I like to add it as I go.  There's nothing worse than a gloppy mess of wayyy too much condiment on something.   Especially Mayonnaise.  Ick.


All you need for this salad is 1 large honey crisp apple, 1 medium shallot, diced, 1 whole Rotisserie chicken, shredded, pepper, salt, and some mayo; however much you prefer. Mix all ingredients well, chill in fridge for about twenty minutes and enjoy!

The apple really makes this chicken salad special!



I also tried it on a few of these adorable and yummy Naan crackers.  I've been wanting to try Naan for some time now. These crackers are so tiny, yet packed with great flavor. 

Hummus would be grand on them too!
And of course some sriracha had to make its appearance!!  So good!

Here's to lots of cooking and baking this weekend in daylight!

Oh, and you should probably make this chicken salad sooner than later.  The chicken is not going to shred itself.  :)

  1. Looks wonderful. I will have to try that. Like the idea of the Rotissarie chicken being done already. I love chicken salad, but when I think about making chicken for it, that's when I think of something else!! LOL I will try this one. Love Mom
