Homemade Chocolate Chip and Peanut Butter Pancakes
Once again, I've been a bit MIA. Sorry about that. You probably have been busy enough with your own magnificent life to even worry about this tiny little blog in cyberspace. My sincerest apologies, truly. It's been 2 days of trial and error for me I guess you could call it. Between being semi-sick with some weird cough, aches and sore throat since Thursday night, which I guess would be called a cold; although I refuse to call it that. I take those Cold-Eeze brand "sucking candies" that are supposed to stop the duration of a cold. Well I only took two and I think they worked. However, I still have a nasty cough. Bleh. The other trial and error bit would be the lovely pancakes I decided to make on a whim this morning. It took 4 batches folks!! Four batches to get them pretty much right. And good. And tasty.
I'm sure better chefs than me have done the trial and error thing millions of times, and they probably had to make 10 batches to get a recipe right. So maybe 4 ain't so bad. I was getting frustrated though. Just a little. But that's the whole point right? Trying something out until it fits? It was about 10am when I started making the batter. Two batches were basically back to back. Both sucked. Wayyyy to dry. After playing around with a couple ingredients and different measurements of sorts, batch 3 happened about 30 minutes later; after I got a chance to clean up a little, put a load of peanut butter and pancake batter soaked kitchen equipment in the dishwasher and start all fresh again. Before the fourth batch happened, I took a little break, did a few things around the house and went out and treated myself to a pedicure. Loved every minute of it. It's nice to walk away from things sometimes, no matter what you're working on. Recharge!
Batch 3 rocked! I did not use Vegetable oil in that batch. Batch 4 does have veggie oil in it, and still tasted pretty damn good! I did that because I wasn't confident of how they still tasted. Maybe things from scratch are always going to taste that way? From scratch? Homemade? Just a touch off, yet still amazing and not "from a box". No? Enlighten me please. The hubby did like them though. He gave batch 3 an 8 out of 10. Batch 4 was the same to him. I actually like batch 4 a touch more. < Hey, that rhymed! So the recipe for batch 4 will move on to the next round! And the time batch 4 was officially finished? 4pm! We both still nibbled at them though. Side Note...I am not a baker. I prefer to cook. I am slowly getting used to coming up with my own recipes. And baking is so precise with measurements. I sometimes sort of dislike that. (I'm being nice). I was always proud to grab my handy box of Bisquick from the pantry and get pourin' and flippin'. But I woke up today and figured that I should give it a whirl.

Homemade Chocolate Chip & Peanut Butter Pancakes
(makes about 6-8 pancakes)
1 1/4 cup All Purpose Flour
1 Tablespoon White Sugar
1/4 Teaspoon Salt
1/4 Teaspoon Cinnamon
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Egg , Lightly Beaten
1/4 Teaspoon Vanilla Extract
3/4 Cup Milk
1 Tablespoon Vegetable Oil
About 1/3 cup of almost melted JIF Creamy Peanut Butter
(about 30 seconds, stir)
Combine all dry ingredients first, then add in the wet ingredients. Don't over mix. Let batter sit about 5 minutes at room temp. That way you can clean a little. :) And also since the peanut butter was warm, it should cool off a little while sitting there. Make any size you want, I prefer my pancakes a little bit on the smaller side. Top each cake with chocolate chips right after you pour them on the griddle.
