Dinner Tonight...

I was pretty much starving today from about 2pm on.  All I had yesterday was tea and soup; all day. I was sick.  Don't worry. I even lost 3 pounds!  That might be the only perk about being sick! Sometimes I wish I could eat like that more often and when I am not sick.  I know I know.  Am I nuts?  Yes, I am.  But again, I really like to be in control of what I eat; usually.  All in Moderation... don't forget. :)

I just can't do sandwiches everyday for lunch.  I don't want to do yummy brownies or ice cream for dessert almost every night and pizza...which is one of my many favorite foods, just can't happen almost every day of the week.  I 'm aware that most people do not eat this kind of stuff each night as well.  So I guess it just really comes down to the portion sizes, or the variety of what we decide to eat most nights.  I work with a lot of engineers.  Most of them are men.  Pretty much every single day of the week I hear different people ordering different, of course delicious, yet very fatty foods for lunch.  It's always between a chicken cheese steak, a regular cheese steak, pizza, or very high in calorie sandwiches like The Reuben!!  (My favorite sandwich ....ever!!!). ugh!  I totally have will power...most days. I know they are older men who probably don't give a squat about their waistline.  But to eat that type of food 5 days in a row....eek!  I'm not exaggerating here...I hear those type of phone calls being made to different restaurants about 4 days a week.

It's about our insides too!  Just think about all of that salt, fatty cheese, cholesterol!  Okay, I'm sorry.  I don't  mean to come off spastic and nuts about this; what seems to be a  "bad foods" topic.!  I am very much aware that we only live once.  Definitely indulge! But the bottom line is..we should take care of our bodies first and foremost.  Inside and out. The secret ingredient to life is moderation.  And that's not just with food, but you already know that. So even though all I really wanted to eat tonight was pizza with extra cheese, I decided to whip up a fresh and light pasta dish.  One tiny excuse for not having cheese tonight was that I still feel I should stay away from dairy products. {There is Parmesan cheese grated on top of this, but I mean...that  type of cheese doesn't count, right?} This cough is still persisting and very annoying.

I also haven't been to the gym since Wednesday night.  Grr.  But Thursday I felt like poo, so, there you go.  Although, I still have an urge to make a little something else soon....something with chocolate.  Maybe. We'll see.

This is a pretty healthy pasta dish.  Enjoy on a day where you were a good human being with your calorie intake. :)

-Whole Wheat Thin Spagetti
-EVOO
- 1 Red Pepper
-1 Tomato
-1Medium Onion
-1/3 Cup Water
-Minced Garlic
-Salt
-Pepper
-Dash of Red Pepper Flakes
-1/3 Cup Red Wine


Cook pasta in salted water until al dente.

I sauteed the evoo, garlic, tomato, red pepper and onion in a large frying pan.  Once everything is soft, add  the wine, salt, pepper, and red pepper flakes.  Reduce down another 5 minutes.  Then carefully spoon saute mixture into your blender or food processor. Blend/ pulse a few times until all has same thick consistency.
Once your pasta is ready, drain and add your saute mixture sauce to the pasta. mix well.  Top with another drizzle of evoo, grated Parmesan cheese and basil or oregano.  I ran out of basil leaves. So dried oregano it was.
