Whole Wheat & Chia Blueberry Muffins

OK!  Hi there!  It's been a while. I wanted to share a delicious and super simple muffin recipe that's so damn good for you too!  These beauties are packed with fiber and protein, along with some natural sweetness from the blueberries.  These are moist, yet dense, which helps keep you feeling satisfied. Add a little peanut butter too while they are warm!

I thought I'd get going with the recipe instead of writing a novel that keeps you scrolling seven times before getting to the thing you actually want...the RECIPE!

So, I said hello, I hope to be back soon with another fun blog post and recipe.  In the mean time, enjoy!

Whole Wheat & Chia Blueberry Muffins

Bake @ 375 for about 20-25 min. Insert a toothpick inside a muffin.  If it comes out clean, they are more than done!

*Butter or spray a muffin tin or use liners. Make sure to spray the liners if using liners.

Dry Ingredients:

 -1 & 1/2 cups whole wheat flour

- 1 tbsp chis seeds

- a generous sprinkle of cinnamon, I usually go with a tsp.

-1 & 1/2 tsp baking powder

-pinch of salt

Wet Ingredients:

 -1/3 cup unsalted butter, melted.

- 2 eggs

-3 & 1/4 cups brown sugar ( I used Truvia but regular ol' brown sugar, preferably light, is fine too)

-dash of vanilla extract

-1/3 cup milk  (I used skim and just sort of eye balled it)

- 1-2 cups of fresh blueberries

Directions:

1. Combine the dry ingredients together on a medium bowl.

2. Combine the sugar and melted butter together in a different bowl.

3. Add the vanilla and stir.

4. Beat in the eggs one at a time, mix well.

5. Add the butter mixture to the dry ingredient bowl and stir well until combined.

6. Add the milk.

7. Mix everything together until combined well.

8. Fold in the blueberries.

* optional: add a little more cinnamon on top of your muffins before placing in the oven.

*Allow to cool a few minutes. Can be eaten warm or room temp.

* These freeze well- at least 6 months! Take one, wrap in a paper towel, microwave one minute. Pure joy!

Enjoy!! these are seriously so damn good!!

These make great snacks, quick breakfast or sweet treat before bed!

Lingering holiday treats: A couple tips

Hello!

I hope you had a fabulous Christmas with your families. Claire had an amazing one filled with lots of love, yummy food consisting of anything 'mush' form, and way too many toys.  There are a few we won't be seeing for another 2-3 years because she's too little for them right now.  But the more the merrier, right?

I made a good amount of cookies, but nothing like last year.  I went overboard because I was still pregnant and had more of a precious thing called time. Cookies + pregnant women.  You do the math.

And never mind the fact that my peanut butter blossoms resemble boobs.  Still, they were delicious and devoured by all.

The recipe for these delectable cookies is so, so good! They were a hit at holiday parties and on the dessert platter.  Peppermint Mocha cookies make my heart happy; especially while drizzling ribbons of melted white chocolate over them. Messy is the new tasty.  So fun.

I don't know about you but it's hard for me to resist something sweet directly after a meal, let alone at holiday time. As I'm trying my best each day to hit the gym more, I'm also vowing to stop with the sugar for a little while.  I know it's still holiday time, but we all know how we feel in our own skin. Sugar just loves to set up camp on my butt and inner thighs. I'm going to do my best because that's all I can do. Oh, and I'd be lying if I didn't mention the 2 weeks hubs and I couldn't stop with the McFlurry's for dessert.  Yeahhhhhhhhhhhh.  Dairy is a sneaky little bitch.

All 650 calories of it.

Over the years, I've found a few tricks that work for me when I need to stop picking at sweet treats during holiday time or just need a cleansing day.

  • Brush your teeth.  you'll be minty fresh.  You wouldn't want to ruin fresh teeth with chocolate, right?
  •  Chew gum- they say chewing gum makes you more hungry.  I beg to differ. It keeps my mouth fresh and after awhile, I just don't feel hungry. Chewing gum burns calories, too.
  • After a meal, usually dinner, if you feel a sweet tooth coming on, grab a water bottle or sip tea. You think you're hungry and need that piece of chocolate but you're most likely not.  After a meal, I try to finish one bottle of water over an hour and I eventually stop thinking of food and thus feel full.
  • Brush your teeth before bed , hit the sack and watch a little TV.  I'll get sucked into a show or start to doze off. I also find it better to be in bed watching TV than on the couch. The kitchen isn't close to my bed.
I hope you'll try a few of these tips when it comes to the sweet treats!  We can only do our best, but let's try to kick some ass!

Here's to a happy and healthy 2015!
