Need a manicure


Hi!  I'm popping in for a quick moment!

Happy little Saturday to ya!  Hope you're making it a good one!

For me, today has consisted of getting some more cookies baked and out of the way to be frozen, I made a new delicious muffin recipe because I wanted to, and some laundry occurred as well.  Gary and I were up about 8am and I have no clue why. It happens I guess. Or we're just officially old at the tender age of 31.



I feel like I need a coffee now. And a manicure.  

I plan on getting the manicure sometime next week.  Do you ever do a lot throughout your day, but there's that one thing in the back of your mind that screams out at random intervals...YOUR NAILS ARE NASTY. GET. A. MANICURE.   NOW.  Gee, thanks mind. Up yours too.




Anyhoo, tonight we're going to Gary's Aunt's annual Christmas party. I made a few tasty treats that I need you to be aware of asap!  Like....RUM BALLS.  Holy Lord are they yum!  I took just a tiny nibble to make sure they rocked like last year and they were spot on!  There's only 2 teaspoons of dark rum in these. But they sure do smell rummy.  


Give these a whirl this holiday!  They are super easy!  These are chocolate truffles, but calling them Rum Balls is fun.  No?


Rum Truffles
From Crazy for Chocolate cookbook.

Prep time: 20 minutes
Refrigerate

Ingredients:

1 cup semi-sweet chocolate chips or a dark chocolate baking bar
1/4 cup heavy cream
2 tbsp. butter
Chocolate cake crumbs {I just buy a chocolate cake from the grocery store bakery or a chocolate pound cake}  Or if you've got balls, by all means, bake a cake! :)
2 tsp. dark rum { can also use a brandy or whiskey }
About 1 cup { a little more } of any kind of pretty sprinkles for the holidays that you like.


Method:

1. Take out a small, clean bowl. set aside. Combine the cream and butter in a small sauce pan over low heat until the butter melts and the mixture is just boiled. Add the chocolate chips/baking bar to the hot mixture and combine well until smooth.

2. Pour the melted chocolate mixture into the clean bowl and add the cake crumbs and rum; combine well.  Refrigerate for at least 20 minutes or until mixture is ready to handle and shape into balls.

3. Roll the balls into your desired sprinkles, getting a decent coat on each ball. * I used large paper plates for each sprinkle I used*  Place balls in small paper liners and place in a tin/ Tupperware. Store in fridge until ready to serve.

After all I did today, I need a manicure.  Yes, it's still on the mind.  Oh well.

  1. I need both a manicure and a pedicure! I use the excuse that as soon as I do my nails they always seem to get chipped, I am yet to find a great nail polish that doesn't chip within 2 days of me putting it on.

    Those rum balls look delicious! As do the cookies ;)
