Andes Mint Chocolate Cookies


Happy Sunday!

It's been a pretty productive, yet tiring weekend so far.  Baby girl has been playing soccer a lot lately and seems to be taking a lot out of me.  It's such an amazing feeling.  More recently, I find myself staring at my stomach. We can actually see tiny movements happening and it's pretty narly!  The other night, Gary and I just sat there all wide-eyed anticipating the next "see through kick" if you will.

I'll be 23 weeks on Tuesday and I'm basically coming to a close on the second trimester.  28 weeks technically marks the third trimester!  Time is going by pretty fast, yet for some reason it all still seems so surreal. It might just be me, but I am despising any kind of shopping lately. Just the thought of going to the food store or trying on clothes exhausts me.  I sucked it up on Friday after an already long day and went to the food store specifically for blog items.  I wanted to bake more and I did just that.  I didn't go overboard, but I did make these foolproof, delicious cookies.





Chewy, chocolaty,  minty and soooo easy.  I've said it once and I'll say it again, I love a good cake mix cookie.  These cookies rock!  The Andes mints melt within a few minutes once you have placed them on the hot cookies and then it acts as a frosting. Just smooth with a spoon.

These would be great for the holidays.  Just add a little crushed candy cane on top for prettiness.

And the ladies were right, you'll need milk with these babies!

Are you a fan of mint and chocolate?   It's my second favorite combo.  Of course chocolate and peanut butter is first.
