I think I see cooler weather on the horizon!
Good Lord. Why is Fall such a wonderful season? I never really had a pumpkin/spice/apple/cinnamon obsession until more recently. Pumpkin is especially amazing and lately I find myself constantly thinking about how I can use it in new recipes. The smell of pumpkin anything and anywhere makes me smile.
Cheesecake makes me smile too. Though I rarely indulge in cheesecake, it's by far my favorite dessert. Put the flavor of pumpkin anywhere near it and you can count me in! Cheesecake and creamy pumpkin puree and pumpkin pie spice sounds amazing doesn't' it? What about turning it up one more notch? What about a flavorful gingerbread, buttery crust and some fresh maple syrup in this cheesecake sound? I know.
It's a done deal.
That's what these Maple Pumpkin Cheesecake Bars are. Holy scrumptious and creamy and delicious and all of the above. When I got home from work yesterday, I knew I had to go food shopping but for some reason I was dead set on also purchasing certain items for different pumpkin recipes. It's really just the itch for Fall I think. I actually would love to whip up 4-5 different tasty pumpkin recipes this week. This dessert is number one and it's totally worthy.
This is like pumpkin pie meets bar form. These are just as delicious as pumpkin pie, but I think better. The different Fall flavors and spices really make these bars unique.
I already have a side dish for Thanksgiving. Looks like I have a dessert to make this year, too.
I wish you could have smelled my kitchen. This recipe will make Yankee Candle look bad for sure.

When you are getting ready to cook something and your cooking space isn't that large, do you just put things that were on your kitchen counter...everywhere? I always do this.
I feel so unorganized and so not as perfect as Ina Garten, but I have to do what I have to do I guess.
