Spicy BBQ Potato Salad





You guys!  I can't begin to tell you how incredibly delicious this potato salad is!  It's a few things, actually. It's got a wonderful kick-you-in-the-pants flavor, it's so simple to make, and it was made completely off the cuff.  I'm getting more and more used to this off the cuff type stuff!  Hey that rhymed! You know what else it basically is? It's at least 15% healthier than the typical all-American potato salad.  Yes, I made up a percentage.  It's a random, low number , I know. 


Let's rewind a second. This recipe also has a jalapeno in it. Spicy food is good for you and your metabolism. And there is Greek yogurt in it. So those components make this recipe at least 50% healthy. :)  That's my rationalization and I'm sticking to it!  At the end of the day, this potato salad is so different from what you and your taste buds are used to, I hope, and it's got such incredible flavor. Seriously, make this one at your next BBQ get together.  Your guests will die from their taste buds exploding thank you.  Don't worry, no one is really going to die at your BBQ. That was called a joke; a funny if you will.



I love comfort food, and potato salad?  I want to marry it.  It comes second to my favorite comfort food which is mac&cheese; of course.  Potato salad is wonderful for lunch,  as a late night snack, and of course at all of the upcoming BBQ get togetherness. { I was not aware that togetherness was a word. Thanks spell check}!   At our Memorial Day party,  I chose to make a much healthier potato salad but it was full of flavor and I got tons of compliments on it.  It was realllllllly good, too.  However, this potato salad is a creamier one, slight healthier still, and again, it's got such a unique flavor.  The BBQ sauce pulls everything together!


Just make this; if you have 45 minutes to spare. The part that takes the longest is boiling the potatoes and getting them to a nice tender texture. That'd be it!  This will totally do the job for that late night craving of comfort food!




Spicy BBQ Potato Salad

Ingredients:

-5-6 small red potatoes
-2 TBSP BBQ sauce { I really like Bulls eye Original, but any BBQ sauce you like will do}.
-1/2 cup plain Greek yogurt
-1/2 cup light mayo
-1 medium yellow onion, chopped well  { I chopped it decently, then threw it in my food processor and gave it a rough chop, 1-3 times}  You want consistent texture and not random chunks of onion.  eek!
-1 small jalapeno, seeded and diced
-fresh parsley
-dash paprika
-salt & pepper to taste


Method:

-In a large pot, bring salted water about half way up, to a boil.  Run potatoes under cold water briefly, skin on, then place gently in boiling water. Cover and allow potatoes to boil and become fork-tender for about 30-35 minutes, checking on them periodically.

- Once you can practically almost cut the potato in half with your fork, they are ready to be drained in your colander.  Let them sit in colander for about ten minutes and cover them with a towel to let them keep warm.   Now you can start chopping your onion and jalapeno and fresh parsley.

- In a medium bowl, mix the yogurt and mayo together. Once the potatoes are OK to handle, cut them in quarters and gently fold them in the yogurt mixture. Add the rest of the ingredients and mix well.  Serve right away or place in fridge and cover until you get a bad comfort food craving!  Garnish with more parsley if you'd like or a little chopped green onion would be great as well. Enjoy!
