Italian Turkey Stuffed Shells




So, I have a healthy recipe for you!  Hey I eat healthy things, I just don't tell you about it all the time. Well, the Greek yogurt, ground turkey, and spinach are the healthiest ingredients in this dish.  But ohhhhh is it good! Like, it's really good. This is my spin, on a whim mind you, on the classic stuffed shells.  Wilted cooked spinach is mixed with ground turkey as the main stuffing.  And in place of the classic ricotta cheese { as good as we all know it truly is}, I used plain Greek yogurt, mixed with a few seasonings and shredded mozzarella cheese. It's divine I tell you!



Once all is happily married, unless you told someone the cheese mixture is actually Greek yogurt, I guarantee no one would notice.  That's pretty wonderful. And this cheese mixture by the way?  I would be totally content eating it out of the bowl with a spoon. It's insanely good!



I apologize for my huge hand in the way, but I had to get a shot of that gooey cheese. One hand on a camera and one hand holding this deliciousness on a flimsy fork means you have to work fast!




I love coming up with my own recipes here and there and I love it even more when they actually turn out realllllly great! This dish has different textures and flavors which make it pretty stellar. And in the end, everything matches up wonderfully.


 We all know how hard it can be to make up a brand spankin' new recipe. I'm so glad that this worked out!  And did I mention how simple it is?  Omg...Sammy could make this. It's that easy.  I don't think I have cooked with jumbo shells since I was at least 16 maybe?  Mom...help me out here.  Anyway, I had them in my pantry for some reason and I decided to utilize these babies. I'm glad I did.

I know you're going to love this dish! That's a lot to say for a recipe that was made off the cuff!


Italian Turkey Stuffed Shells

Ingredients:

-1 lb. box of jumbo shells
-1 pkg. ground turkey
-2 cups homemade or canned pasta sauce
-1 to 2 Tbsp. EVOO
-2 big handfuls of spinach leaves
-2 cups plain Greek yogurt
-1 cup shredded part-skim mozzarella
-1 tsp. dried basil leaves
-1/4 tsp. garlic powder
-dashes of S&P
-Parmesan cheese


Directions:

-Heat oven to 350 degrees
-Cook the shells according to the package. Drain and set aside.
-Spray a 9x13 baking dish with cooking spray.
-Drizzle a little EVOO in a medium pan over medium-high heat.
-Cook down the turkey until browned and then add the spinach {2 handfuls of spinach seems like a lot but it wilts very fast}.
-Sprinkle with a little salt and black pepper.



-Once both are cooked well enough, take turkey mixture off  heat.
-Spread pasta sauce in baking dish







-Time to start stuffing! Cheese mixture first, then meat mixture. It's fun. :)

This gets a little messy, as you can see.







 Place the shells next to one another. I only used 13 shells for dinner tonight. Unless you're hosting a party or get together, I wouldn't use the entire box of shells. There are a lot!






-Top the stuffed shells with a little more pasta sauce and shredded mozzarella. Sprinkle with Parmesan cheese.



Ready for the oven!

-Cook for 10 minutes, uncovered; or until the cheese has melted.


Dig in!
