Creamy Almond-Coconut Oatmeal with Honey and Cranberries


You guys!  I think I finally made the best oatmeal EVER! No. I don't think; I know! This oatmeal has every single flavor note there is.  It's creamy, sweet, satisfying and comforting all in one bite!  For some reason, I never ever thought of making my very own oatmeal. The kind I used to eat and only eat was the packaged-way-too-much-with-sugar kind. Let's face it; oatmeal looks like a hot mushy mess.  I never thought it could be transformed into something so pretty and oh so good.  However, I still used Quaker Oats; just the real, plain, ya know, boring kind.

At least that's what I always assumed it was.



I have been eating more oatmeal recently because of my yearly check-up at the doctor's office back in October.  All was good, but my numbers for cholesterol were up a bit higher this time around.  High cholesterol runs on both my mother's side and father's side.  It was either fish oil capsules or oatmeal.  I went with the oats, obviously. I guess eating Honey Nut Cheerios just didn't cut it. Sigh.

I have a small confession to make too.  I can't stand coconut.  The only time I'll eat it is in those amazing coconut creme eggs around Easter time.  It's a texture thing for me. I DO love almond ANYTHING though.  Plain or smoked almonds are my favorite. Almond butter is deeeelicious and super healthy for you.  And I now drink and pair almond milk with my cereal about 70% of the time.  Yum!  And when I saw this almond-coconut milk in the grocery store, I picked my jaw up off the floor and grabbed a carton and went on with my day.


Side note:  If you haven't noticed by now, I also have a HUGE thing for dried cranberries.


When we had Easter brunch at my husband's Aunt's house, his cousin made an oatmeal with this milk.  It was super creamy and the flavor was heavenly. Ever since that day, I've been planning on making a similar version.  I love the idea of this milk being utilized in oatmeal.  Boiling water should only be used to cook pasta.  Yep.





Once you take a bite, it's pretty hard to stop.



Creamy Almond-Coconut Oatmeal with Honey and Cranberries

Ingredients:

1 cup low-fat or skim milk
1 cup almond-coconut milk {I bought unsweetened but regular sweetened would work fine}
1 1/2 cups oats
1 T. brown sugar
pinch of salt
pinch of cinnamon
honey {as much as your heart desires}
dried cranberries  {as much as your heart desires}


Directions:

-In a medium sauce pan over medium-high heat, bring both milks to a boil. Add salt and cinnamon; stir.
-Add oats and stir occasionally for another five minutes until the mixture is thick and creamy.
-Add brown sugar; mix in.
-Top with honey and dried cranberries. 

Other great oatmeal toppings: bananas, strawberries, mango,  apples, chocolate chips, raspberry jam, Greek yogurt...and much more! 

I love oatmeal because it's so versatile.





I am just in love with cranberries and their tartness and great texture. And honey is,well, just awesome!

  1. Mmm.... oatmeal! Normally, oatmeal is just a winter thing to me but since winter does not want to go away this year, I'm going to have to make this ASAP! I even have all of the ingredients on hand :)
