Apple Cinnamon Mini Muffins



Hey you and happy Friday!!


What a week!  It seemed like it went sort of fast in a way, but I have just been feeling crazy exhausted.  I haven't worked out in a week and that could be why. I don't like this at all.  Maybe it's the abrupt Spring weather change?  We went from 40 degrees to 85 degrees in like three days this past week in South Jersey!


I've been feeling like I'm getting a cold too.  If I get sick, someone will get hurt.  Or they will just be forced to make a lottttt of muffins with me.  Apple cinnamon mini muffins, that is.  But, making these were a cinch.  I don't quite think that's punishment.  Right?



I don't know what made me make these. Maybe it was the Jiffy muffin mix box that I've had in my pantry for two months now...staring back at me.  I love muffins and I love easy and fast mixes as well. I mean let's face it, they all come in handy sometimes.  I bought a few new honey crisp apples today and saw the mix and decided to cut up one apple and add it to the mix. 

These were adorable and heavenly  The chopped apples added a wonderful crunch to these little cuties.  I'm a lover of muffins, but I'm even a bigger lover of cute and tiny muffins. Or basically anything that's sinful and delicious in 'mini' form.


The 'muffin tops' may look a touch burnt, but let's chalk it up to that's the homemade look.  These were perfectly baked and not burnt at all. These are moist, crunchy, and sweet all in one bite.  How can you go wrong with that?







Make sure ya make these and have them ready for tomorrow's breakfast or brunch!

Apple Cinnamon Mini Muffins

Ingredients:

1 pkg. Jiffy Apple-Cinnamon Muffin Mix
1 Gala or Honey Crisp apple, diced
1/4 cup milk
1 egg
drizzle of honey {optional}
sprinkle of cinnamon {optional}


- Pre-Heat oven to 400 degrees

- In medium bowl, Mix all ingredients together. Spray a mini-muffin pan with non-stick cooking spray and fill with about 2 tablespoons of batter into the cups.

-Bake for 10-13 minutes.  Let cool about 5 minutes. Take muffins out of tins and serve immediately or place in a Tupperware tightly shut.

Yields 12 mini muffins, but make as many as you'd like.
