Homemade Strawberry Cream Cheese




Happy First Day of Spring!!

It still feels like Winter.  Yay.  We have this in the bag though, people!!  It's officially Spring and  it will inevitably get warm!!  I'm ready for planting flowers, fire pit/patio time, cocktails outside,  bike riding, and grilling! 

What about you?!

I love the pretty colors that Spring brings.  It's not even really about Easter for me or the pretty pastel colors, although I do love pastels.  It's more about vibrant colors. Greens, reds, and pinks.  I also adore a bright, strawberry color.  And strawberries, well, they have that incredible color.

I do love the below treats, however.   A lot.






Okay. Back to the cream cheese.  I thought strawberries+pretty color red+First day of Spring= A Recipe!

A homemade, fast, and yummy recipe!

I had all the ingredients...why not?




Enjoy on your favorite bagel in the A.M. {you should toast it. just a recommendation}.


Homemade Strawberry Cream Cheese

Ingredients

You totally don't need exactly 12 fresh strawberries. I randomly picked the good ones out of the box and 12 of them seemed to be perfect.  I would go with 10 tops, though. :)

2 8oz packages Philly cream cheese, softened.

1/3 cup powdered sugar.

Directions

Mince strawberries pretty well , until they get to a pretty squishy consistency. Place all ingredients in your electric mixing bowl or a hand mixer works just fine. On speed 2, let it go for about 2-3 minutes. The consistency will be very creamy. It's perfect and delicious.  Smear on your bagel or dip some wheat thins in it right away,  because, well, wheat thins are amazing with any cream cheese. Duh. Or chill in fridge until ready to use.




I so wanted to smear some on a bagel tonight. But I had some...in the freezer.  My Bad.


This was SO GOOD! And the perfect combination of sweet and savory!

Please make this!  You will not be disappointed.  It totally beats any store bought strawberry cream cheese!
Or any cream cheese for that matter. With my two favorite exceptions: Any Einstein Bagel 'schmear' and plain Philly cream cheese. But, since there is Philly in this recipe, it's perfect!  Win-win?

Again, Happy Spring!  For now, stay warm still.  Flowers will be blooming before you know it!
