Banana Crunch Muffins


Good morning. Or good afternoon.





Are you eating anything special today for breakfast or brunch?  Because I think have the perfect muffin for you.  Perfect for breakfast or brunch. {or anytime, really}.  Especially on a chilly, windy  Sunday morning here in New Jersey.

These Banana Crunch Muffins won't let ya down!




How beautiful is this batter?  I totally tore up the wooden spoon.  This batter is incredibly good and for some crazy reason my brain just doesn't want to tell me that it's actually not too good for you and maybe you should put the spoon down.

I really have to stop eating cookie/brownie/cake/muffin batters.  For real.

 Ohhh the gorgeousness. I can't handle it.

Banana Crunch Muffins
Adapted from the lovely Barefoot Contessa

Serves: Lots!!

Preheat oven to 350 degrees

Ingredients

3 cups flour
2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 stick unsalted butter {melted and cooled}
2 large eggs
1/2 cup milk
2 teaspoons vanilla extract
3 ripe, mashed bananas
1 cup small diced walnuts
1 cup shredded coconut (I skipped the coconut)
1 cup granola (I skipped the granola)
You could also add in mini chocolate chips. 

Directions

Mix the flour, sugar, baking soda, baking powder, and salt in a large bowl.  Add in the cooled, melted butter. Combine eggs, milk, vanilla, and the mashed bananas in another bowl and add to the flour mixture.
Don't over mix.  Fold the walnuts and any other yummy add in you choose into the mixture.

Note:  This recipe could also be made into a banana nut loaf.  Spread into 2 greased loaf pans for the bread. Or if you want these muffins, fill 2 muffin pans with cupcake liners. Pretty and adorable liners are better.

Bake 1 hour and ten minutes for the loaf or 25-30 minutes for the muffins.


The topping you see is just a little granola sprinkled on top.




Serve hot or at room temperature.  These are so unbelievably tasty with strawberry jam and melted butter.  The flavor combination with the banana...Wow!
