Strawberry Ricotta Pancakes


Umm..are you sure I need to even talk about these pancakes?  Look at them. Don't they speak about their yummy goodness all by themselves?





















Okay...well I do hope you're drooling over these..if anything.


I found this recipe on Food.com.  It's pretty much perfect! When I am searching  for a random recipe that comes to mind, I just Google it, and of course like, 8583975277 different recipes appear. I just browse the first two pages and choose one that looks the best and that is half and half. Half easy and half semi-difficult. Or just something that gives me a tiny challenge.  I love a good challenge; especially when it comes to cooking. These pancakes were perfect. They were so pretty. and refreshing. and fluffy.  and light. And, well, insanely good! 

Lately, I feel like I am seriously losing my will power with food.  Obviously I love food and love to eat, and when I make all of these recipes, I eat a good amount of what I make. And so does the hubs. The cook has to of course 'taste' the final product. But, eh hem, if something is ridiculously tasty...I eat approximately ten  more bites of it. I'll also admit I have been eating Swedish Fish like my life depends on them or something.  I haven't had Swedish Fish in years!  I have definitely been taking in a bit more calories than I normally do.  I guess we all go through an 'eating more than usual phase?'  Please tell me I'm not the only one....eek. The bottom line?  I have got to up the ante on working out. I do love exercise...but not recently...and I don't know why. grrr.  We all know how our bodies work and we know our bodies well.  I know I just need to keep working out, especially If I continue to make delicious foods; that's not going to stop. I know it.  I love cooking and I love this blog too much to end anything or deprive you lovely people. My readers. :-) So no worries my loves.

I did workout today, but it wasn't the best workout session.  I guess the crappy ones still count though?  I am contemplating on trying out the whole 'working out in the a.m. thing'. Yeah...um, I will get back to you on that one.....

But when I got back, I made these lovely pancakes. And all was well in the world again. 




Strawberry Ricotta Pancakes

{Adapted from Food.com}

Ingredients:

1 cup All-Purpose Flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 T. sugar
3 T. unsalted butter, melted
1/2 cup Ricotta Cheese (I chose part-skim)
3/4 cup milk (I used skim)
1 egg, separated
1 lemon zest, grated
3/4 cup thinly sliced fresh strawberries


In large bowl, mix together the dry ingredients. In a smaller, separate bowl , combine the melted butter, milk, ricotta cheese, egg yolk and lemon zest. Mix well. Pour the wet ingredients into the dry ingredients and stir until just moistened.



This batter smelled amazing; especially with the lemon zest.  And I just think this photo is so pretty.



In a small, clean and dry bowl, beat the egg white until a foamy texture appears. Gently fold into the batter. Do not over mix. Add the berries and stir gently. I use about a 1/3 cup to pour the pancake batter onto the hot griddle.  You'll know the griddle is hot and ready once a few drops of water make a sizzle noise on the pan. I got 8 pancakes out of this batter and as you can see, they were a decent size too!


Enjoy with any topping you like!  Syrup, fresh strawberries and some powder sugar went perfect with these.
