Strawberry Cake Mix Cookies





Be prepared. Be very prepared.  The next couple of days will be filled with sweet stuff!  I'm talking, cookies, cakes, chocolate and basically anything involving deliciousness and things that are bad for you. If you get a 'new' cavity at your 6-month dental visit, blame it on me. I will take full responsibility. It's also just because I am on this Valentine's Day kick for some strange reason.  I really don't know why. I actually never ever fussed about it in my life.  I was one of the many majority that always says, "it's so commercialized and greedy."  Well, aren't most Holidays?  I say cook your loved one a nice dinner or just go out for a nice 'date' night, and just be together and be happy. Or , hang out with our girlfriend's, take that bottle of wine out and watch slasher movies together.  I have done this...many years ago and it was a blast! A cute Hallmark card doesn't hurt either...but make sure it's a Hallmark card, boys!  :-)

 I think that maybe it's simply because I just love chocolate oh so much.  It seems to be more about the baking for me than anything else with this Holiday.  And eating it all of course. There's just something about stirring a cake mix that relaxes me.  It's soothing. Cooking and baking can be great therapy, ladies!    If you want to start out slow and easy with a simple recipe for just some 'you' time, make these cookies!

Last night, and I have no idea why, I started thinking about plain old cake mixes.  I already had two boxes of strawberry cake mix that I purchased a little bit ago because I love that cake mix and cake mixes are always great to have on hand.  I also always have chocolate cake mix in the pantry, too!  Because, well, it just makes sense!  You can do a lot with them instead of just baking a cake! Sorry for the repeated words....I just love cake mixes. :-) I thought a strawberry cookie with some chocolate drizzle would be divine.  Oh and yes, they are so pretty and cute for V-day!  I googled around for a bit to make sure that there was a recipe different for a 'cookie', because you can't follow the cake mix exactly since it is meant to be a cake.  These were so simple to make, and the batter is deadly. Watch out!

I say 10 licks of the spatula. Tops!

Strawberry Cake Mix Cookies

Yup...this is all you need to make these babies!

And a wooden spoon, but you already knew that.  I hope..

1 box strawberry cake mix
2 eggs
1/3 cup vegetable Oil

Chocolate Drizzle:
1/2 cup chocolate chips
T. veggie oil
Microwave for about 1 minute until smooth and mix well.

Mix well until all is combined.  This will form a good dough and become very thick.

Set the oven at 350 degrees and bake for 6-9 minutes. These came out perfect at 9 minutes!  But every oven is different. Just keep an eye on them.

I shaped into small balls and placed them on parchment paper.  I think that's easier and more fun than using a Tablespoon to 'drop' the cookies onto the sheet.  But whatever you prefer!

Time to decorate!

I love chocolate and strawberry together so I had to top these with chocolate!  The cookies are terrific by themselves, but a little topping never hurt anyone.  I've also seen these with a pretty white glaze.  Just mix some powder sugar and water together until nice and thick. Yum.






If you have read this blog a decent amount already, then you know I have this thing with chocolate being cold. Out of the fridge , into my mouth!  There's something about cold chocolate that's just utterly amazing, and I love the hardened texture it has!  It makes all the difference in the world. Seriously.  About 10-15 minutes in the fridge, and you are set!  Set to enjoy the best chocolate ever!  I also put chocolate chips and Thin Mint cookies in the freezer...

I think everyone and their mom does that with Thin Mints though. Right?

These are really something...especially with that chocolate drizzle. I got 14 cookies with just one batter. Pretty cool. I want another cookie right now....but I think between licking the rest of the bowl clean and the spoon, I'll be okay without another cookie...for now...ugh.

  1. Awesome Dana, Dad keeps seeing your recipes and keeps telling me to make them for him!!! We are trying to watch, he doesn't gain the wait for some reason, so I'll make it for him and I'll just taste!!! LOL Keep them coming. Love ya Mom- I enjoy baking more than cooking, but like to cook also. Don't know what we're doing for V-Day yet?
