Lightened Up Cajun Chicken Pasta


Happy Oscar Night!!

You may not have a care in the world about the Oscars.  And honestly? I never really did either. But tonight is different my friends. I'm excited to watch the Oscars for the simple fact that the creator of my all time favorite adult cartoon is hosting them!

Yep!  That would be Seth MacFarlane! :-)  I hope you have at least seen the movie TED. Please tell me you have...

The designer clothes...ehh, I could care less.

I love Family Guy and I love Seth. He's also kind of cute...and has a great sense of humour.

This dish could be your Oscar Dinner!  It's kind of fancy.

Make this tonight. I say this because it's fantastic. Well, and one of my favorite bloggers has developed this recipe and she says to make it too!

This was such an easy pasta dish to make. It's got just the right amount of heat from the Cajun seasoning, it's 'health-ier' because there is less cream in it and it's even more fabulous the next day as leftovers. Just as I am doing right now. As I type this. Excuse me one minute while I grab my plate and take a bite...






I decided to also add some garlic bread to this dish with a homemade garlic bread spread that I quickly whipped up. I can't even describe to you how delicious the spread was.  (the bread was tasty, too). I slathered it all over a long Italian loaf I picked up at the food store.  Nothing is better than some butter and garlic...melted together.  Nope, nothing.

Quick Garlic Bread Spread

1 stick of unsalted butter, softened
1/4 cup Parmesan cheese
2 cloves of garlic, minced
1 T. dried parsley
1 Tsp. black pepper

Mix all ingredients well.
Spread on both sides of bread.

Heat oven to 350 degrees
Bake for 10 minutes until crispy and golden brown.
