Breakfast Dilemma? 1.23.13


You know what I really want for breakfast most mornings? You know what I dream about sometimes for breakfast?  I will even think about what I am going to eat for breakfast the next day while eating dinner sometimes. I swear.  I can't help it.  I really do love breakfast. I love brunch items as well.  I hear those Eggs Benedict's calling my name.....I love both concepts. A lot.  Okay, I think you get the picture.  Personally for me, though, I have a hard time deciding whether I want something that's nutritious and that is beneficial for my body and that will keep me fuller, longer.  OR...of course something incredibly fattening, sugary and simply scrumptious all washed down with a creamy, hot latte or a cold coffee. Depends on the season.  Ugh.  Decisions...decisions...

Well, first of all, my work-week mornings are usually a bit rushed. This is because I set my alarm for 6am, but always, and I means I  alwaysssss hit snooze until about 6:50...but I don't physically get out of bed until 7.  Why do I do this? It never fails either. It's like that way every single morning. It's almost comparable to Groundhogs Day.  {The Movie}.  However, I am never late for work. I'm not a brown-noser or anything like that, I'm just somehow at least 15 minutes early most days.  I guess I just do the 6am thing do give myself more time if I happen to, say, get up before 6:50ish. Ha!  That will be the day!  This is also why I workout at night.  I cannot imagine having to wake up any earlier than I have to...

So, since I'm a bit more rushed in the A.M., I don't have time to make pancakes or even heat up a frozen breakfast sandwich. I never purchase them, but if I did, with everything else I'm doing in the morning, there really wouldn't even be time to warm something up. (Man, I don't even have children yet!).  And forget about stopping at a cute little diner or cafe to have a quick bite.  Nope.  It comes down to either making something for myself the night before, grabbing it and head off to work Or picking something up.  I'm normally not famished in the morning.  That's when I will just grab a coffee and maybe pick up a piece of fruit.  But when I am starving....that's again, where I have to choose a healthy or bad option. The bad options would be the obvious ones, like McDonald's, or a loaded-with-saturated-fat muffin, or Donuts. I have to say that 90% of the time, I go with  a really boring, healthy option. Booooo. It's when I create something the night before that really gets me excited for breakfast the next morning!


Here are just a few very simple recipes for a satisfying, healthy, and yet really delicious breakfast!  {it saves money, too}


1. Whole Wheat English Muffin with Apples, Peanut Butter, and Honey
Toasted or not, this is so tasty!  Since I toast mine, the peanut butter gets a little warm and runs a bit more. It reminds me of when I was little and didn't feel too well, but still had a decent appetite.  My mom would always toast up some plain old white bread and slather peanut butter on top. It would get all warm and melty.  YUM!  This is a perfect breakfast...and a touch healthier!   I top with a Granny Smith apple or Honey Crisp, about 4-5 large slices and drizzle honey on top. That's it.


2. Peanut Butter and Chocolate Puffins Cereal with Skim Milk

Please just do yourself a favor and buy a box of these.  You won't be disappointed.  This is hands down the best healthy cereal I've had yet.  And I've tried numerous different healthy style cereals.  The Best Healthy Cereal... Yet  There is so much flavor in these adorable little puffy squares.  And only 110 calories, with skim milk, 150. for about 3/4 cup. I always go over a little more though. And it only has 0.5. grams fat.  Go buy them. Now.


3. Peanut Butter on Whole Grain Wrap
That's just it. That simple.  You can add fruit and other condiments if you'd like, I just normally do the wrap thing Plain Jane.  Try it with some Cottage Cheese , too. That's really tasty and a bit more filling.  I usually eat two of the PB wraps.  Decently filling as well.  I've also done the PB&J on this wrap. 4. Whole Wheat Bagel Thin with Part Skim-Ricotta Cheese and Fresh Strawberries

This is perfect on an English Muffin , too.  I like to mix up the carbs though. I also add a drizzle of honey sometimes.  Cheese and fruit always pair well together. So you could imagine how this tastes.  Can't you?  It's satisfying AND delish!  Every time I've eaten this, I'm full for a good 3-4 hours. No Joke.


5. Whole Wheat Bagel Thin with Apples and Cream Cheese
I know...these are all very similar.  But as you can see, these are easy and what I like to create at night for my breakfast the next day. If I remember to do so.  These are all just buffers pretty much. A muse if you will, to help you create yummy and satisfying breakfasts...AND for cheap.  I plan on always creating more quick and easy breakfast options...these are just what I have been currently enjoying.  I hope I've inspired you a bit...
