Adorable Mini Oreo Cheesecakes with Cherry Topping


Hiiiii. Hope your Sunday is going well!  I am sad to see the weekend over soon and with another Monday rolling around tomorrow.  Yuck.

Last night I saw Hairspray! I saw it with my BFF at a theatre about 30 minutes from my house that just recently became restored!   And it was gorgeous!  It's a cute and tiny theatre but the decor is absolutely stunning. The show was seriously phenomenal...it really felt like we were on Broadway.  I didn't get too many photos because I  tend to become Chatty Kathy at most social functions, but here are a few.

My perfectly portioned dinner. (I actually didn't finish it all..too busy talking).  That pasta stuff right there?  Yeah, amazing!  All I knew was that it had tons of cheese in it, was incredibly rich and creamy, and it had bacon in it!!  Oh and how cute are those carrots?! 


 They had a really nice spread!





















It was really a fun night! Sometimes I wish I was a talented singer/actress. And also for the fact that I would get to go to the fun cast parties after the show!


In the midst of my cooking and baking yesterday, I randomly wanted to make tiny cheesecakes. I tried an entire cheesecake for Thanksgiving about six years ago. Big time F!  It was awful and just completely fell apart in the oven. I don't even know how or why that occurred. But it did. It sucked. And I cried. A lot. 

So this time around, I thought I would start small and then maybe by this Christmas, I will try again, an entire plain cheesecake from scratch and hope for the best!! I had a fun idea of making an oreo cookie the 'crust' of this cutie cheesecake.  And let me tell you...these are the perfect size and so.damn.good.

And they are pretty. I like to make pretty food, too.

Mini Oreo Cheesecakes

2 packages (8 oz.) Philly Cream Cheese, softened.
1/2 cup sugar
2 eggs
12 oreo cookies

Pre-heat the oven to 350 degrees F.

 Beat cream cheese and sugar in large mixing bowl until well blended. Add the eggs, one at a time, beating on slow speed until well incorporated. Place 1 cookie in bottom of each of 12 paper-lined muffin/cupcake cups.  Look for the 'tighter' cups that have silver in them. Fill the cups with batter. Bake 20 minutes or until centers are almost set. Cool. Refrigerate 3 hours.

Top with any kind of topping you prefer. I love plain cheesecake with that classic cherry topping!

The Oreo just adds a nice chocolaty flavor to this otherwise Plain Jane Cheesecake. And it's soft, so it's easy to cut through with a fork. Or your teeth.

So easy , yet so good!






Random...but do you ever see this on the back of that brownie or cake mix box and tend to disagree??
Yeah, me too.


















If you're just relaxing today, please make these cheesecakes!  It's such a fast and simple recipe. And the best part is that they have to chill and set in the fridge for at least 3 hours. You could fit that nap in!
