Blue Sandwich Cookies and Birthday Cake!


I've always had a thing for sandwich cookies.  First there's Oreos. Duh. The ice cream man always had that 'Chipwhich," was it? Yum!  And of course there's those classic Carvel Pinwheel Ice Cream sandwiches.  I loved those! I'm also in love Skinnycow Ice Cream Sandwiches. There's no guilt there...unless you eat 3 in a row!  I distinctly remember going to the Carvel Ice Cream shop on Sundays when we lived with my Grandparents.  I had to of been no more than 8 or 9 years old. I really miss those days sometimes.

Well, this past Sunday, we went to my cousin's sons 5th birthday party. She had wonderful food; from penna pasta to a scrumptious salad and even a corn and cheese casserole.  Holy yum!  Sorry there are no photos. I of course was Chatty Kathy again and forgot to whip out my camera!

And then I made these guys...




















These were a hit with the adults AND the kids!  My cousin has 5 children...you read right...5!  She is an amazing mother and I really don't know how she does it all but she does!  God bless you Christine!! Oh, and her kids are adorable. There were actually a total of 7 children at this party and it totally felt like there were no kids there!




 I just used the original Nestle Toll house Chocolate  Chip Cookie recipe and melted about 2 cups of white chocolate chips with 1 Tablespoon of Veggie oil in the microwave for about 2 minutes until nice and smooth.  Then I just added large drops of blue food dye.  That's it!  You can obviously make any kind of color you want! You can't get too crazy with recipes if kids are going to eat your masterpiece as well. :-)



Let it cool down first before you slather the cookies with it.

We decided to cut some up...it made us feel a little better about eating more than one.



 This cake was incredible!  Chocolate mousse whipped icing!  ( I topped mine with some strawberries from the fruit bowl).
