Chocolate Dipped Brownie Balls


Hmmm....

It's been one of those weekends....well, for me anyway.  Don't get me wrong. It's been a fine weekend so far.  All is good.  I've just been indulging a bit more. It's only Saturday and I have had more than my fair share of sweets and delicious foods.  Here is a sneak peek from my yummy eats so far...we will get to those chocolate brownie balls in a bit.

On Friday, I went and visited my best friend (and my favorite redhead ever) Lauren.  She lives in Maryland but thank god she's literally right over the Delaware Memorial Bridge.  She's not far. It's only about a 45 minute drive. And that's if you have a "led foot" , like me. Sometimes. And she has one too, but she won't admit it. :-)

I wish she would move back to NJ though.....That's a hint, Laur.

We just can't comprehend why other drivers think it's A-OK to go 20 mph in the left lane. Or not. Any lane really. It's just not cool.  According to us.

Annnnnnd this is what we indulged in last night...after a huge (yet very tasty dinner). 

  • Acme Strawberry Cheesecake
  • Peanut Butter and Banana Frozen Yogurt
  • Vanilla Bean Ice Cream

Oh man.  I will never understand why all of the most delicious food out there is bad for you. However, we both only had two scoops of ice cream and 1 slice of the cheesecake.  Not bad at all. right?  It's in moderation. We don't indulge in these sweets everyday.  I felt guilty though.  And I hate that feeling.  When I got home today from Maryland, I had about 2 hours until I went to my friend's baby shower.  I had zero motivation to drive to the gym, but felt the need to workout; do something, ya know?  So I opted for Jillian Michaels' 30 Day Shred DVD.  It was a twenty minute workout, but intense.  I don't even know how I did it. Honestly. I was tired prior to that.  It felt good I guess....But just look at this cheesecake!




























We also indulged in scrumptious appetizers, and a main course for dinner. We both didn't finish our entrees though.  We saved room for , well, the above desserts of course. Then we watched two movies, caught up on life, and I had half a glass of wine, and we basically passed out by 12:30am.  Honestly?  It was the perfect sleepover!  Love those kind of nights.  I also love that we can do that...at the age of....28.  Okay, 29.  Okay, maybe add one more year to that.  Big whoop.  We had a blast. And laughed....A LOT.  You can't beat that.

I'm amazed that I am still pretty hungry.  At my friends shower today, I didn't eat much, but I still ate.  The shower was at a really great Italian restaurant close to where I live.  I haven't been there in about two years, but I do remember that they have wonderful Italian food.  I had a small salad with vinaigrette, two slices of their amazing pizza bread, and a small serving of Penne A la Vodka. And one delectable chocolate cupcake. Yum!

And then I had about two of these when I got home....okay, three, total.



These were really delicious. The hubby is obsessed...and so I am. I see these on the Christmas Dessert Menu this year for sure.  These are so simple to make, too.  And it's one of those things where you think, "Um, why have I never made this before?" This is such a cop out recipe because after I was finished making soup the other night, I was pretty tired. But just had a craving to make a quick dessert.  It's literally a box of brownie mix and melted chocolate chips. Yup.

There are two rules to follow if you're going to make these. 1.  These must be eaten cold from the fridge.  2. Chill them over night in the fridge.  Chocolate is so much tastier served cold.  It just is. Warm chocolate?  No thanks.  Unless it's some kind of sauce. Just smile and nod. And no one gets hurt.




Chocolate Dipped Brownie Balls

This is how you make these happen:
  • Your favorite brownie mix (I used Betty Crocker's Peanut Butter Chip Mix)
  • Dark Chocolate Chips.  Melt for about 2 minutes in microwave with 1 T. Veggie oil.  Stir well.
  • Bake the brownie mix according to the package. I spread the batter in a 13x9 glass pan.  This is key to making these brownie balls.  This makes the brownies thinner, and once all is cooled down, cut into squares and pick up with a spoon or small spatula and shape into balls.  Dip in chocolate. Chill over night. Dig in!



*I think the peanut butter chips really made these pop!  Although, chocolate on top of chocolate is never a bad choice.

After eating a delicious and hot Stromboli for dinner, with hot marinara sauce, I think I am sweet-toothed and carbed out.  I will be enjoying some yummy red wine the rest of the night.  Make these brownie balls though.  You will not be disappointed.
