Black and White Eggs




Happy Sunday!  Can you believe it's almost February already??  I for one am glad! That simply means we are getting closer and closer to warmer weather!




Today is definitely a more cleansing kind of day.  After my insatiable appetite over the past two days, I just need to keep it on the lighter side today.  I had a pretty good workout earlier this morning.  The laundry is washing and drying away as we speak, and I made a darn good healthy egg dish a few minutes ago.


















I really wanted to get creative today and whip up a different kind of pancake; but the carbs are very unnecessary today!


This was a very quick and easy dish!

Black & White Eggs

4 large eggs
1 can of reduced-sodium black beans
1 small onion, diced
dash of black pepper
dash of salt
dash of garlic powder
cooking spray
Top with your favorite hot sauce (I adore Siracha Chili Sauce!!)


It was pretty tasty. Of course, I would have loved to have added sour cream and cheddar cheese to this.  I just don't need those extra calories today.  Blehh.

Cook everything together until eggs are cooked through and the onions are a touch softer looking.





Sammy really wanted a taste! {Little does he know, he will be getting nice and pampered in the next hour}.  I'm kind of jealous.
