I don’t know what it is, but with it still being summertime
and the fact that my mind always has dessert on it, I’m all about s’mores
lately. After I saw this this , it’s like she got me hooked all over again!
I love the idea of mixing up different food items to make the classic
summertime/ camping treat. And we have yet to make a fire this summer out on our
patio! I blame the baby. Sort of.
Two nights ago I made two s’more sandwiches ( yes, two)! for
myself in the microwave. It wasn’t as
good as a campfire s’more, but it did the job. And today I wanted to make
something different, because there are so many different s’more recipes out
there on the internet already! But I
felt like doing a little baking, making a mess in the kitchen, and being
creative.
I’d be the first to tell you that I much prefer cooking to
baking. 99.9% of the time when I bake something, it either cooks too long,
doesn’t cook long enough, and therefore ends up in the trash. I have to really follow something to the tee in
order for it to be a miracle baked treat!
Today, I actually followed no recipe and hoped for the best with this s’mores
bake.
It turned out PERFECTLY.
I was stunned as I couldn’t stop tasting it and had to force my hand to
put down the fork pronto.

It’s not your typical campfire s’more sandwich, but a great dessert
at that. It’s not a pie, but I bet it could be.
You get the great flavor of peanut butter but can still taste the
crushed up graham cracker along with the
ooey, gooey marshmallows and of course, the distinct flavor of Hershey’s chocolate. And the cookie crust for this was baked perfectly! Very moist and flavorful.
Since I wanted to make something, but did want to be quick
about it, I used a package mix of peanut butter cookie. But I’d definitely want
to try it with my homemade peanut butter cookie recipe one day. Either way, this is a killer summertime
dessert! And the best part? It’s still quite messy!

Peanut Butter Cookie S'more Bake
What you'll need:
-1 package of your favorite peanut butter cookie mix or a homemade recipe. ( the homemade version would probably make a lot more so I'd shoot for a 9x13 glass pan. I used an 8x13 dish).
- 1 egg, 3 tbsp. veggie oil and 2 tsp. water. ( packaged mix directions ).
-1 sleeve of graham crackers, crushed
-1 Hershey bar
-1/2 cup chocolate chips ( I used semi-sweet)
-about 1/4 of a bag of large marshmallows
-cooking spray
How you make it:
-Spray your baking dish with some non-stick cooking spray.
-In a medium bowl, mix the peanut butter cookie mixture along with the crushed up graham crackers. A wooden spoon worked great for this.
-Take half of your 'crust' mixture and spread evenly on the bottom of the pan.
-Take a few marshmallows and pull them apart and place over the crust.
-Break apart the candy bar and do the same thing.
-Top with the rest of your crust mixture and add 6 more marshmallows, leaving them whole.
-Sprinkle the chocolate chips on top.
-Bake at 350 degrees for 20 minutes. Let sit and completely cool before cutting into it. However, it was delicious slightly warm!
