Lemon-raspberry streusel muffins + a few nursery pics!

How is another full week upon us??  If you are taking an earlier Holiday vaca, well then I can’t say I’m not jealous.  But please, enjoy! I will be sucking up being at work for the most part and trying to save up my hours as much as I can until I give birth sometime in February. <---that’s crazy to type that!




I apologize in advance if lately, this blog and my instagram feed appear very Christmas-ish.  Tis the season though, right? Between Friday and Saturday, I managed to bake a good amount cookies while also stumbling across a simple and lovely recipe for these here Lemon-Raspberry Streusel Muffins!  I found them in a two-year old Christmas baking magazine; better known as a checkout counter impulse buy.


These were such a synch to make and really delicious.  Lucky for my co-workers, I baked a dozen and froze them up.  Someone will be happy if they forgot breakfast.

Lemon-Raspberry Streusel Muffins

Ingredients:

-2 cups all-purpose flour
-1/2 cup sugar
-2 teaspoons baking powder
-1/2 teaspoon baking soda
-1/2 teaspoon salt
-2 eggs, lightly beaten
-1 cup lemon yogurt or sour cream { I only had sour cream and they were so moist }!
-1/2 cup veggie oil
-1 teaspoon grated lemon peel
-1 cup fresh or frozen raspberries

Streusel Topping:

-1/3 cup sugar
-1/4 cup all-purpose flour
-2 tablespoons butter

 Method: 

In a large bowl, combine flour, sugar, baking soda, baking powder and salt. In a smaller bowl, combine eggs, yogurt or sour cream, oil, and lemon peel. Add to dry ingredients until just moistened.  Fold in raspberries.  

Fill a greased or paper-lined muffin tin about 3/4s full.  For topping, cut the butter into the sugar and flour until crumbs form. Sprinkle about 1 tablespoon over each muffin. Bake at 400 degrees for 18-20 minutes or until batter is cooked all the way through.

One bite and you'll smile.


 

Today we added a few more touches to baby girls room. { i.e.} curtains, rearranging dresser and crib a billion times until we agreed on the best position for them, we have a futon in there that we decided to keep place very close to the window for a nice view. I won't be getting a rocker, so if one of us has to sleep in there one night, I think an extra 'bed' will come in handy.  I like to be practical whenever I can. :)


I was never really into 'themes' in general. My main touches of colors and patterns throughout are light pink, light gray and white; chevron and polka dot patterns.

And this was pretty much my dream closet for babies room.  My husband and his dad found this all at Home Depot and put it together in one day.  I still can't believe how much it resembles this closet.

We found a better deal for a dresser and crib after I found out that the crib I liked from Pottery Barn was discontinued.  I actually love our now dresser and crib better. Win-win!

 We have a few more touches to add, like a wall decal, a few frames/ I want to make a collage of her with her newborn pics and I have a small white shelf that needs to be hung.  My shower is in January and I'm waiting to see what stuff I receive before I go crazy shopping for my baby girl.   Let's put it this way, headbands and leggings and stockings...the obsession has already begun!!

    love, love your nursery! we have white furniture also. the curtains are so sweet, little one is sure to love it! I can't believe you are due in February!!!
