Pumpkin Spice Hot Chocolate


Hey there.

Hope you're doing well!

I feel like my brain is all over the place lately, but I can't really explain exactly what it is that is consuming me.  Baby nursery is top priority and it's slowly coming into works. Everything is packed away and ready for storage and I picked out paint colors so far!   It's more than that though.  I have so many recipes that I'd like to show off on this blog. The fact that lately I'm realizing I don't enjoy shopping { of any kind} anymore.  I mean, I do, but I don't.  GASP SOUND GOES HERE.  Hard to explain, but it's true friends.  I think it's more about the hassle of it all.  The driving to the place, the traffic, dealing with ass hats on the road and in the store, the busyness of the store, and so on.


This is what my Friday night looked like:





 I do try to use coupons when I can and if necessary, but it overwhelms  me.  Maybe I'm just weird.  Yes, that's definitely  it.  I also tried to simultaneously condense all of my old recipes into my new recipe book. Yeah.  That didn't happen.  I chose to relax on the couch and watch movies all night; a much better idea if I say so myself.

Tacking on too many projects at once can really make you go nuts.  I wouldn't recommend it.  One thing at a time/ one day at a time.  Yes?  yes!

Today has been pretty relaxing but I did clean earlier and cleaned up the front of the house outside. That was my workout for today.  I weeded, trimmed, and swept. A lot.  Gary and I got up decently early and took a drive to Einstein Bagels for breakfast.  I was starving so I didn't snap any photos.  Let me assure you that my toasted onion bagel with bacon, egg and cheese was deeeelish!  And when I go there I always get their vanilla hazelnut coffee.  It's SO good!

I stopped at Target to pick up stuff for dinner, which is going to be  ground turkey and rice enchiladas, some chips and salsa and a possible salad.  Yummmm.  While hubby was busy doing "work work"  { actual career work} as he calls it, I decided to make a little hot cocoa for you.

You will love this hot cocoa recipe.

So simple to make AND there's pumpkin in it.  Win-win!  I tried at this recipe twice.  The first batch did not work and quite honestly resembled the look and texture of...mud. Yum.   I think it would  have made a nice facial mask once cooled.

2nd time around was perfect!





Pumpkin Spice Hot Chocolate


Ingredients:


  • 2 cups fat-free milk
  • 1 cup water
  • 1/2 cup Hershey's Unsweetened cocoa
  • 1/2 cup pumpkin puree
  • 1/4 TSP vanilla extract
  • 1 TBSP granulated sugar
  • dash of pumpkin pie spice



Method:

 In a medium sauce pan, stir milk, water and cocoa together over medium-high heat until most of the clumps have dissolved.  Once smooth, { about 5 minutes} add in the pumpkin puree and stir well.  Add in the vanilla and pumpkin pie spice. Cover for about 5 minutes  { bring it to a boil once} until all is combined and smooth.

Take off heat and ladle into your favorite mug. Top with whipped cream or cool whip and mini marshmallows.  Add a little pumpkin pie spice for garnish.

Slurp and enjoy!

What I do is...bring it to my office and write my name on it.  Yep.  The coffee sucks there, but with a little yummy creamer, it's wonderful.
