Bisquick Cheddar and Maple Syrup Pancakes


Pancakes...

Warm.

Fluffy.

Comforting.

I dream about pancakes.

I am always thinking about different concoctions and how I can make a different/unique batch.

And of course, they have to be delicious.




Call me lazy, and it's totally partially true.  I've been taking the shortcut route in my cooking lately.I definitely blame baby a little bit. Or maybe it's because I simply don't feel like standing for too long in the kitchen. I really just want cooked, hot food on my plate, couch, feet up, and ready to eat!  Maybe I should hire a  professional chef for just the next four months?  Hmmm.

In more bizarre land, I am not sure why, but breakfast type food always comes to mind when I'm zoning out on the couch watching any Bravo TV show.  It's so weird. I randomly thought about this pancake concoction last night while watching an episode of The Real Housewives: Miami.  I know this combo is already out there in pancakes, muffins, casseroles, french toasts, etc.  Pancakes and breakfast items seem to be so overwhelming these days.  I've seen maple syrup pancakes with bacon.   I didn't have bacon but I knew I wanted to involved cheddar cheese with maple syrup and warm apples and cinnamon as a topping.  This entire pancake combo just worked! 



You know McDonald's and their maple injected pancake batter "buns" that has the bacon/cheddar/sausage thing going on?  That was sort of my inspiration for this batch.  Cheddar and maple just make a lovely marriage.I promise. I've eaten the fast food chains' pancake style sandwich before and it was really good.  But clearly not as good as these pancakes. 

Annnnnd I'm going to say with a straight face, that these pancakes are much healthier than the above mentioned.




These pancakes are a teeny bit indescribable; they are that good.  You would totally not want to kick these out of bed.



Pancakes are such a comfort food.  And when Sunday morning rolls around, they are always on my mind. French toast is , too.  I see a french toast bake in my future! I get so giddy about this stuff.  I also have this idea of having a few friends and family over for brunch. Either around the holidays or for Easter time. If I do it this year, you have my permission to call me a lunatic. 

 I actually crave hosting a brunch...that's how much I love breakfast foods!






Do yourself a favor and make these asap!  Once you taste these, you won't think, "shortcut route."


Bisquick Cheddar and Maple Syrup Pancakes

Smaller pancakes:6-7 Larger pancakes: 4

Ingredients:


Follow instructions for pancake mix on back of box.

My add ins:

Pancakes:
Real maple syrup, warmed 
Shredded cheddar cheese

Warm apple topping:
1 granny smith apple, diced
1/4 cup brown sugar
dash cinnamon
1-2 TBSP unsalted butter or margarine

 
Method:

For pancakes, as soon as you pour the batter onto  the hot griddle, sprinkle cheese and then pour some syrup in a small bowl, and drizzle syrup on the cakes with a spoon. I made mine a bit larger, so I waited about 3 minutes until they could easily flip. Keep adding some butter to the griddle pan if there isn't enough moisture/sizzle around the pancakes.

For the apple topping, add all ingredients to a medium sauce pan. Cover for at least ten minutes; stirring occasionally. You want the apples to be pretty soft and the brown sugar and butter mixture to be browned and a tad thickened.

Warm some maple syrup in a microwave safe bowl and pour over pancakes. Top with the warm apple topping. And some more syrup.  No cavities up in here.
