That's A Wrap & Some Delicious Weekend Eats

Hey, hey! 

I think I once told you a little ways back how I felt about lunch. Unless I am meeting someone for lunch or I'm at an afternoon event, lunch isn't a big deal in my world.  I would rather enjoy a larger meal at breakfast or dinner. It's 'ehh' to me.  What are your feelings about lunch?  On the other hand, that doesn't mean that I don't eat anything for lunch.  I'm still human and get the hunger growls , usually around 11am. Even though I normally keep it pretty light on what I eat during the work-week, I thought it would be cool to share with you what I normally eat for lunch throughout most of the week at work and what I make at home. 

If not cool, helpful I hope...

This is what I work with on  most Sundays. So many combinations...so little time.

I love wraps. Like, LOVE wraps. There are so many different flavors out there now and they are also so versatile.  Not to sound too cliche, but the possibilities of ingredients are endless. It's also fun to put together a wrap. Oh, yes.  You'll see.

These keep me decently full and I always keep chips or popcorn in my desk, or more fruit in the work fridge; so I just pick at that stuff if another hunger pang occurs.  I hope you'll try at least one of these wraps!  Some are similar but it's usually the normal items that I purchase when I go food shopping and what I tend to use the most.

Wrap #1
Soft flour tortilla

Garlic hummus, red peppers, cucumber, spinach leaves, sriracha, salt and pepper

This is SO good.

I wrap them in foil.

Wrap #2
Soft flour tortilla

Plain Greek yogurt, sriracha, spinach leaves, mushrooms, cheddar cheese, salt and pepper.

Believe it or not, I like to eat raw foods sometimes too.

You may have different thoughts about raw foods, but I like to keep the wraps flavorful  yet still light and healthier.  I also do wraps with black beans or leftover meat from dinner, but I had neither of them.  Such is life. :)

Whole Wheat Wrap

Homemade Guac,  red peppers, salsa, cheddar cheese, sriracha,  salt and pepper.

I only had flour tortillas and whole wheat wraps.  Also try spinach wraps and sun-dried tomato wraps. They are pretty damn great!

Peanut butter, honey, apples

Yup, that's what my weekly lunch looks like.  I don't label them.  I just grab any one because I'm starving and it won't matter which one I grab; it does the job. It's like a wrap roulette!

I hope this will help you out if you ever have a lunch dilemma or are just in need of a fresh and new wrap combination!  Trust me, I am fully aware at how stupid-expensive produce is. But if you commit to utilizing most of what you purchase and eat it throughout a weeks time, you get a healthy meal and you're not wasting money. Win-win! :)

Avocado-chocolate pudding/BBQ chicken, baked potato, roasted asparagus/caprese salad/sweet Italian sausage with roasted onions and peppers/ Raspberry sorbet/Challah French Toast.

Avocado-Chocolate Pudding


-2 cups dark chocolate almond milk
-A little over 1 cup of dark chocolate chips, melted
-1 cap full veggie oil
-1 ripe banana, mashed
-1 ripe avocado, mashed
-dash kosher salt


1. In a microwave-safe bowl,  melt the chocolate chips and veggie oil for about 1 minute or so until the chocolate is completely smooth.

2. Mash the banana and avocado with a fork in small bowl just until creamy , yet still a tad chunky in texture. Add all ingredients in blender and pulse/use the blend button until mixture is completely thick and smooth. Add a touch of water to loosen the mixture up if needed. It will become thick.

3. Let it firm up in fridge for at least 2 hours or more until serving.  Top with fresh berries or whipped cream. Or both!  Enjoy!

This really turned out SO well!  Healthy chocolate pudding, basically.  It was awesome!
