Ugly Monday Weather Equals Ugly Monday Salad


But my salad was delish, friends!!  Really. So good.

See for yourself...

Well, hold on a second. First of all, I made this black bean dip last night and it was GOOD!


I wanted to simply dip some tortilla wrap in it for a snack last night. So tasty!



This dip was so easy...clearly.

 Easy Black Bean Dip

1 can black beans, drained and washed well
2 T. water
2 T. of the canned bean juice
juice of 1 lemon
dash black pepper
dash onion powder
dash garlic powder
dash paprika
dash cayenne pepper
dash salt

Blend all ingredients together in a food processor, blender, or mini-food processor until smooth. Taste until desired spice and flavor.

Enjoy with tortilla chips, wraps, Naan crackers or just your fingers.

I was feeling creative, what can I say? And yes. that would be a medium sized Tupperware bowl that I ate it out of. Quick and efficient.  Or just tired and lazy.



Can you guess what's in it there??

Okay. I'll tell ya.

  • 1 cucumber, quartered
  • a handful of spinach leaves
  • a handful of shredded cheddar cheese
  • a handful of shredded carrots
  • about 3-4 T. of the bean dip
  • a generous pour of light balsamic Italian vinaigrette
  • black pepper


I know it doesn't look too pretty and the ingredients sound a little out of whack, but trust me on this. The flavors really marry well together.  I think what makes it is the black bean dip and its spiciness. Yum!

That was dinner. and then for some reason I was in the mood for my Skinny Girl Margarita.  On the rocks, no salt.



She hit the spot after a crappy Monday for sure.

Some things are obvious and this has actually looked worse.  Give it a go!!

  2. I love that you have Fluff in your cabinet! man that sounds good. All I've eaten today is soup.... HOWEVER - it was homemade soup that I made in the crock pot yesterday! so good.
