Turkey Fiesta Crescent Rolls


I hate to complain, but working a 10 hour day is plenty enough for me.  I do not know how other workers in all kinds of professions work more than 12+ hours.  God bless them.! It was long a  Monday.  My husband started his new job today.  Same field, {Software Architect}just a change for the better.  His first day was about 12 hours. (The people in this field can be Chatty Kathy's too). He used to get home a good 2 hours before me.  I get home between 6:30 & 7, normally. Until he gets into a routine with his hours, it will be a little bit of a change.  I didn't leave work until 6 tonight, {busy day}, so that means by the time I get on the train, it's about a 30 minute ride, It's around  6:50pm when I get home.  We live 5 minutes from the local train station which really makes a difference!  The hubby's new work place is a good hour and a half ride now.  Kind of stinks, but he will eventually get a routine and work from home about 2 days a week, which will certainly help. 

He didn't get home until 8:15.  I was going to go to the gym, but our Sammy had his own 12 hour day without ever going potty.  He normally has about a 10 hour day. I felt like just making a quick dinner and relaxing.  I didn't want to leave him again.  It's just too long of a day.  I can't help it. He's my baby.  I think Gary is going into work a little later the rest of the week, so that won't be as long of a day for Sam.  So now I can stop making up excuses not to hit the gym, right? :-)

The both of us were starving, so I whipped up a quick and easy dinner. Too easy.  Yet really yummy!

Turkey Fiesta Crescent Rolls

1 lb lean ground turkey
1 tin of Pillsbury Crescent Rolls (8)
1 medium onion, almost minced (mini hand chopper/ food processor works best)
1 pkt reduced-sodium taco seasoning mix
1 pkt Tex-Mex 60 second rice ( Old El Paso)
Shredded Mexican Cheeses (Sargento brand is great)
1/4 cup extra virgin olive oil


Cook the turkey until mostly browned in the oil. Add in minced onion, and taco seasoning mix. Let simmer for about 2-3 minutes.  Add in the rice.  The rice has a harder texture from out of the bag.  Cook down until the rice is soft.  About another 5 minutes until all is bubbly and thickened a bit.

Add a light layer of cheese on the dough. Add the turkey mixture and  roll up neatly.  Bake at 350 degrees for about 12 minutes until golden brown.  I made up this little recipe and named it.  I know there is a similar recipe for  this, and all of the different crescent rolls out there from Pillsbury.  This is just an fyi.

This is surprisingly so tasty and satisfying!  Didn't even need a salad!

This is a simple, awesome sauce!  Sour Cream and a dollop of Sriracha Chili Sauce.  You seriously only need a tiny squeeze of the bottle. Unless you reallllllly love spice!
